Chicken Naan Muffaleta – 13PPV

You know I have a new obsession for Naan.  And a crush on Costco.  Well throw my sister in the mix and an opportunity for both turns into this…Chicken Naan Muffalata and let me tell you, it is FAB-U-LOUS!  This was only my second trip to Costco and it was Holly’s first.  So I did my best tour guide schpeel and waved like Vanna to all the things I had already tried, already scanned, you know…showed her the ropes like a big sister is supposed to do.  

Let me segue here and fill you in that my sis is apparently a walking #pointsplus calculator.  After I put the first few things in my WW app she started spouting off points before I could even get the app open again.  Maybe I should take her to Vegas next time.  

Anyway, back to this delicious new find.  I stopped to look at greek olives and Holly found a jar of “That Pickle Guy Muffalata Mix”.  We both decided quickly that it looked very interesting and discovered it was only 1PPV per 2 tbsp so in the buggy it went.  According to Wikipedia the Muffaletta sandwich:

“has its origins at the Central Grocery in the French Quarter of New Orleans.[4]

According to Marie Lupo Tusa, daughter of the Central Grocery’s founder, it was born when Sicilian farmers selling their produce at the nearby Farmers’ Market would come into her father’s grocery for lunch and order some salami, ham, cheese, olive salad, and either long braided Italian bread or a round muffuletta loaf. In typical Sicilian fashion they ate everything separately sitting on crates or barrels while precariously balancing their meals on their knees. Her father suggested cutting the bread and putting everything on it like a sandwich, even if it was not typical Sicilian fashion. The thicker braided Italian bread proved too hard to bite and the softer round muffuletta loaf won out. Shortly thereafter, farmers that came for lunch began merely asking for “muffulettas”.[5]”
Which makes this buy even more fun!  

Chicken Naan Muffaleta – 13PPV

1 serving Ingredients:

  • 1 La Brea Naan
  • 1 skewer WE Mediterranean Style Chicken
  • 2 Baby Bel Minis
  • 2 tbsp That Pickle Guy Muffalata Olive Salad

You’re going to need a nap before you start this is so complicated.  Ready?   Place Naan on a cookie sheet covered with parchment paper.  Spread the Muffalata evenly over the Naan.  Shred chicken with your fingers and distribute evenly along with broken up Baby Bel.  Bake on middle rack for 15 minutes on 350 degrees or until Naan starts to brown and cheese is melted.  Try to make yourself wait until it cools off before you devour.  I know, complicated right?
