The All American Weggo – 6 Weight Watchers Smart Points

Hot dogs.  Baseball.  Apple pie.  Chevrolet.  It doesn’t get much more American than that.  Well until now.

We haven’t been to every state in this great Union but we’ve seen quite a few.  We’ve been as far west as Hawaii.  North to Maine.  South to Florida and Texas.  All up and down the east coast.  And you know the one thing I’ve noticed?  No matter what medium is used to transport them you can get bacon egg and cheese on something no matter where you go.  Here in the good ole south that combo is best served on a fluffy White Lily Biscuit.  We’ve had bacon egg and cheese croissants, English muffins, toasters, bagels, you name it.  Until now….I give to the U S of A…the bacon egg and cheese All American Weggo.   God bless the red, white and blue.


The All American Weggo – 6 Weight Watchers Smart Points

Ingredients:

  • 1 slice lite bread (no more than 1SP per slice, I used almost but not quite stale White Wheat)
  • 1 egg
  • 1 slice uncooked bacon (no more than 2 SP per slice)
  • 1 slice Velveeta (or other American style cheese no more than 1 SP)
  • Non stick spray

Start the waffle iron to heat according to instructions while you get everything else ready. Liberally spray both sides of the waffle iron and then the bottom of the slice of bread. Place bread on the bottom griddle and lightly press the middle with a spoon to just barely indent. Add the slice of Velveeta and lightly press the center again. Then carefully crack egg in the center of the slice. Don’t worry if some runs down, it’s all going to cook. Cut the slice of bacon in half, add to the top and close the top. Let cook for approximately 5 minutes or until you can smell the yumminess. Gently lift the top a little to check and if the egg is set you are ready to go. Gently open completely (if it needs a little help letting go gently poke with a spatula) and unplug the waffle iron. Wiggle a spatula under the bread and try to lift out in one piece. I was actually surprised how well it all held together…even the parts that had oozed off the bread!

Turn to your spouse, child, or whatever witness you have handy who is standing their with mouth gaping because you are now a hero.  An America hero!
