Mini Apple Stack Cake – 4 Weight Watchers Smart Points per serving (2 servings)

In case we haven’t already discussed this, I’m from the south.  Born and raised.  Good ole’ Rocky Top.  Well I’m not from Rocky Top. Which is actually Lake City.  Or was….but that’s a story for another time.

I’m sure other areas of the country have their recipes they are famous for but nothing says love, nothing spells comfort, nothing puts you in a warm and fuzzy food induced coma faster than southern country cooking.  That’s part of the problem with residing down south and coming up with healthy WW friendly recipes…if you don’t have a container of lard on your counter you don’t have a recipe.

 


Thanks to modern conveniences and some good old fashioned ingenuity though we will overcome.   One of my WW friends in my If You Have an Egg Facebook group introduced me to Pizzelle Italian Wafer cookies a few weeks ago and I thank her.  You are going to thank her too.

 

This easy recipe has only 6 ingredients.  Just six.  You can do this.

Mini Apple Stack Cake – 4 Weight Watchers Smart Points per serving (2 servings)

Ingredients:

  • 5 Vanilla Pizzelle Italian Wafer Cookies
  • 1/2 cup unsweetened applesauce
  • 1/4 cup water
  • 1/8 cup sugar free maple syrup
  • 1/2 tsp ground cinnamon
  • 1 Tbsp brown sugar

Add all ingredients except the Pizzelle to a small saucepan and heat on medium until it starts to simmer.  Simmer for approximately 15 minutes stirring several times.  Remove from heat and let the mixture sit about 10 minutes to cook and continue to thicken.  Place one cookie on a plate and spoon on a thin layer of the apple mixture, spreading evenly over cookie. Continue with next 3 cookies and then top with the 5th.  Cover loosely with plastic wrap and refrigerate overnight.  When ready to serve, remove plastic wrap and cut gently in half with a bread knife.  I like mine cold, hubby likes his heated up with a scoop of vanilla Halo Top ice cream.  Either way this is a southern girl’s dream come true.  Apple Stack Cake like Granny used to make + WW friendly = Southern Girls Rule.

      I have found them at Aldi, Kroger and Publix so far. Aldi was with the snacks, Kroger and Publix oddly enough were in a display at the end of the produce section of all things. Let me know how you like them!

    • I found these at Aldi, but I have seen them at Kroger and Publix too. They are good by themselves but wait until you see some other treats I’ve made with them 🙂

  3. I just about spewed my iced tea when I read your line about lard. Even though I live in southern California now, I was born & raised in the South and that is soooooo true! LOL I’ll definitely have to give this recipe a try!

      Melissa that was sweet tea you almost spewed right? My grandmother kept a coffee can of lard next to the cooktop for everything. Even hamburgers got some…yikes! Hope you enjoy and seriously let me know if you try it!
