Hard Boiled Perfection…it was a long time coming

I could almost cry.  I have waited years for this moment.  Ruined dozens of eggs.  Tried dozens of methods.  Old eggs. New eggs. Brown ones. White ones.  Every boiling time, every cooling method,  nothing else in water, weird additions to water.  I even baked them. You name it, I’ve tried it.  

I even resorted to using hard poached eggs in my recipes because I couldn’t pull this off.  And for the last year…yes…I am ashamed to admit I have been purchasing them already made.  My hard boiling and peeling skills were that bad. 

  
Until today.  Look what I’m holding.  In my two hands.  I did it, I fought my hard boiled battle.  And won!

  
If you’ve been following me long you know of my love for eggs.  I even named this blog after the little power packed beauties.  And I love to make things with eggs even more.  So why??  Why did this seemingly simple task escape me?  I still don’t have an answer, I just know what worked. 

  
First you’re going to need a steamer basket.  I got mine at Target for like seven bucks.  Set it in a pan and add water until it just touches the tops of the little holes in the bottom.  Turn the heat up to high and wait until it starts to boil and steam. 

  
Add the eggs in a single layer to the basket, cover and let boil 1 minute or until the lid starts to bobble.  Turn off the heat but do NOT remove the pan or even peek under the lid.  Set your timer for 13 minutes and walk away.  Don’t lift that lid.  Don’t check on them. Walk. Away. 

  
Prepare an ice water bath large enough to hold all the eggs but not so large you can’t keep the water cold.  This had about a styrofoam cup worth of ice before I gently put the eggs in.  When the time is up remove the pan from the heat. Remove the eggs with a slotted spoon and gently place them in the ice bath to shock those yolks into submission.  Let them sit at least 5 or 6 minutes. 

   
 
Gently tap each end of the egg on the counter and then roll it around with your palm to crack the shell a little.  Just a little.  Then run the egg under cool water and gently pry away a loose piece of shell.  Let the water run under that loose piece and a miracle happens.  The membrane thingy starts to let go and you can get another piece loose.  And another one.  And another one.  Until tada!  Look how pretty they are!

  1. I found the easiest way to peel hard boiled eggs works every time. Sooo easy!
    Put an inch or so of water in a mug drop your egg in, put your hand over the top and shake, shake, shake. Remove egg and peel. Works every time.
