Pumpkin Bacon Apple Cinnamon Waffle: 8 Weight Watchers Smart Points / 7 Points Plus

“Lean to the left”. I love listening to our leader Gwen when she’s checking people in at the scales.  Always an encouraging word, a listening ear, not a judging bone in her now petite dairy farmer’s daughter body. One of my favorites is when one of us gets close to a goal.  Might be first five pounds gone.  Could be 10%. Maybe even reach goal.  No matter the celebration Gwen is our biggest cheerleader.  And if you’re close she’s full of ideas.  Take off your watch?  Empty your pockets?  My favorite… “Next week…lean to the left”.


Our If You Have an Egg Facebook Support Group is full of those long distance cheer squads. And lately our team is cheering for waffles. In fact we’ve  had quite the wave on waffles. Chocolate waffles.  Peanut butter waffles.  Chocolate peanut butter waffles.  The one thing they all have in common is a high protein pancake mix as the base ingredient.  Even as I type this our cheer leader Karan just made a Cornmeal Peanut Butter & Jelly waffle.  Go team go!

Karan and Suzanne use Kodiak Cakes.  My mom makes her own mix.  Me?  I like Birch Benders 16g Protein Pancake & Waffle Mix and Kodiak Cakes depending on which store I visited.  Any way you mix it the high protein blends are all putting about 5 Smart Points per 1/2 cup on the board.  Score.



With all the high-fiving and waffle eating I wanted in on the game.  But I also wanted bacon.  And then I realized I had a serving of my Baked Cinnamon Apple Rings in the fridge.  Oooooh and part of a can of pumpkin that needed to be used.  All the players and no one to coach them, I had to get on the field!


Pumpkin Bacon Apple Cinnamon Waffles: 8 Smart Points / 7 Points Plus

Ingredients:

  • 1/2 cup Birch Benders 16g Protein Pancake & Waffle Mix (or Kodiak Cakes Power Cakes)
  • 1/3 cup puréed pumpkin
  • 1/8 cup egg whites
  • 1/2 tsp pumpkin pie spice
  • 1 Tbsp Kirkland or similar crumbled bacon
  • 1/4 cup Cary’s Sugar Free Maple Syrup
  • 1/4 cup water

Have ready:

Heat waffle iron and spray with non stick spray.  Mix all ingredients except crumbled bacon, water and syrup. If mixture is too thick add water a tablespoon at a time until smooth batter that will pour easily but is still thick.  Pour into heated waffle iron and cook for approximately 5-7 minutes.  Gently lift lid and check for doneness.  If the waffle is not completely set and cooked lower lid and cook an additional 1-2 minutes.

When done transfer waffle to a plate.  Slightly heat syrup.  Top waffle with the Baked Cinnamon Apples, then the crumbled bacon, then the syrup.  Prepare to take one for the team….and then cheer loudly.  Cause we all just won.
