Avocado Egg Salad – 8PPV

Expeditor Bobbie at KSI loves avocados.   Her husband Roy calls them “mangoes”.   We on the other hand love everything Bobbie makes for us to eat.  Cakes, yummy soups, her tiny lunches smell better than anything we could ever dream up in the showroom on our own.  Today’s lunch though was a surprisingly delicious AND healthy twist.  Bobbie’s beloved avocados AND a fabulously delightful meal, success!

Avocado Egg Salad – 8PPV

Ingredients:

  • 1 avocado sliced
  • 2 hardboiled eggs sliced (we used Bobbie’s own fresh from the chicken tushie eggs)
  • 2 tbsp Smart Balance Light Mayo
  • Sea Salt
  • Fresh ground pepper

Makes two servings.  Lightly mash together the avocado and eggs.  Mix in the mayo evenly.  Lightly sprinkle with salt (not too much, this isn’t a bowl of fries!) and pepper to taste.  Divide into two equal portions.  I put mine on Romaine lettuce leaves to keep the points down.  Bobbie had hers on an Arnold Sandwich Round which would add 3PPV.  It was so good I forgot to save any for anyone else to try!
