I’m going to go ahead and brag a little. These got a 5 out of 5 from the civilians who tasted them. Three of the “volunteers” are previous taste testers and went in knowing this was Weight Watchers friendly and that if I didn’t like them they wouldn’t be coerced into a nibble. Two of them however were skeptical. Really not sure what to say. But I stood there unwavering and said “do you like strawberry shortcake? Try one”. They each ate two.

Tuesday is Valentine’s Day and I wanted something sweet but simple. These hit the spot.

​​​Sweet Hearts: 2 Weight Watchers Smart Points per serving (3 servings / 2 SP each)

Ingredients:

  • 1 Joseph’s Lavash (or similar 1 SP flatbread)
  • 3 Tbsp Strawberry Fluff
  • 2 tsp Truvia Baking Blend
  • 1 Tbsp Jell-O Sugar Free Raspberry
  • Coconut non stick spray

Heat oven to 325 degrees. Using a pizza cutter cut the Lavash into 12 strips approximately 1″ wide.


​​Using a piping bag and a round tip lightly “pipe” the strawberry fluff in stripes on each Lavash strip.


​​Starting at the ends roll towards center until they meet. Pick up and pinch the center to make a heart shape.


​​Place each heart in a mini muffin cup and spray lightly with coconut non stick spray.


​​Mix the Truvia and Jell-O powder together and sprinkle evenly over each one


​​Bake for 5 minutes and remove from oven. Allow to cool for at least 5 minutes and use a spoon to gently pop them out and on to a plate to continue cooling. Some fluff will ooze out the bottom….if you are a good spooner you will get all of it!
