As I’m typing this we are headed down for our annual trip (sometimes bi-annual!) to Disney as a family. For the first 18 or so years it was just John, Casey and I. Occasionally we would throw in a grandparent or a friend, and Dusty loves it when he’s including because he enjoys visiting Mr Pickles and other fur buddies at Best Friends Pet Resort.

Two years ago we added our new to us then son in law, Allan. He had never been to Disney and we quickly created a fanatic. Like full on obsessed mouse-a-holic. He fit right in.

This year however, our normal end of December trek got waylaid with the news of our first grand baby. Little Mowgli I’ve been calling him or her…and guess what? My brilliant hubby bumped the trip up to October so they can all go with us!

But you came for the new Weggo didn’t you? I digress….

One of my pre Disney roadtrip rituals, heck it’s almost a game, is to see how close I can cut it on groceries so that the fridge is empty when we leave but we don’t starve or go off plan on the process. It gets pretty creative around the Milligan household those last couple of days and this time was no different.

I am a firm believer though that necessity really is the mother of invention. Or she’s the mother of Weggos anyway.

Three days before we were to head out I had the perishables down to:

2 apples

3 bananas

1 sumo tangelo

1/2 carton egg whites

A few slices of quickly going stale Whitewheat bread

About 3 Tbsp of Kirkland Crumbled Bacon

Babybel cheese

String cheese

Asparagus

More bacon

Sugar free syrup

I had already invented and consumed my new Air Fryer Baked Stuffed Apples not once, not twice…but THREE TIME in under a week but I wanted another apple. And some bacon.

You’re pretty smart. You already figured out what happens from here.

Bacon Apple Pie Weggo – 2 Freestyle Smart Points

Ingredients:

  • 1 slice lite bread (no more than 1SP per slice, I used almost but not quite stale White Wheat)
  • 1 egg + 1/4 cup egg whites
  • 1 Tbsp Kirkland Crumbled Bacon (or equivalent)
  • 1/2 one Granny Smith apple sliced thin
  • 1/8 cup Cary Sugar Free Maple Flavored syrup (or similar)
  • 1 tsp ground cinnamon
  • Non stick spray

Start the waffle iron to heat according to instructions while you get everything else ready.  Liberally spray both sides of the waffle iron and then the bottom of the slice of bread.  Place bread on the bottom griddle and lightly press the middle with a spoon to just barely indent. Add the sliced apple evenly over the bread. Sprinkle with bacon. Sprinkle with cinnamon and Truvia Baking Blend and spritz with coconut or butter non stick spray. Then carefully add egg whites in the center.  Don’t worry if some runs down, it’s all going to cook.  Let cook for approximately 5 minutes or until you can smell the yumminess.  Gently lift the top a little to check and if the egg whites are set you are ready to go.  Gently open completely (if it needs a little help letting go gently poke with a spatula) and unplug the waffle iron.  Wiggle a spatula under the bread and try to lift out in one piece.  I was actually surprised how well it all held together…even the parts that had oozed off the bread!  I added 1/8 cup of sugar free syrup for zero points or if you’d rather have 1/4 cup it’s only 1 SP more!

The smell wafting out our loft door had to be sending waves of people wandering around looking which door to knock on!
