Last week I did a review of Halo Top Creamery ice cream when all I could find at my local store was vanilla.  It was delightful and I printed out the handy dandy order form for my favorite grocer.  Well this week I scored the mother lode…Halo Top Lemon Cake Ice Cream.  Oh my my my.

Since I’m a sophisticated lifetime weight watcher I can’t just sit with a spoon and eat the entire carton anymore.  Not with witnesses anyway.  And I sure wouldn’t post pictures so what to do what do do….

So halfway through the container I set down my spoon and decided I better come up with something.  As I was rummaging through the pantry ranking potential partners for this lemon lusciousness I moved my tin of Quest bars to see what was behind them.  Quest bars.  Hey, there is a Lemon Cream Pie Quest Bar.  Oooooh lemon and lemon.   And Lemon Lemon was born.

Lemon Lemon – 6 Weight Watchers Smart Points (5PPV)

Ingredients:

  • 1 Lemon Cream Pie Quest Protein Bar
  • 1/4 cup Halo Top Lemon Cake Ice Cream

Cut Quest bar into 8 equal pieces.  Softly roll each piece in your hands long enough to soften them and then flatten in the palm of your hands.  Preheat oven to 325 and place all eight pieces on a parchment covered cookie sheet.  Bake for 2 minutes.  Remove from oven, flatten with a spatula and flip each “cookie”.  Return to oven and bake for an addition 2  minutes if needed but keep an eye on them…they go from done to DONE pretty quickly.   Remove from oven and allow to cool completely.


Using a knife gently spread equal amounts of the Halo Top to four cookies, top with the other four.  Immediately place in an airtight freezer safe container and return to freezer for at least 10 minutes.  If you are going to enjoy immediately, remove and consume in a civilized manner.  If you can.  If you are making ahead of time, these should keep well for several days.  Now if Halo Top and Quest will team up and make Key Lime versions….
