Second recipe on Smart Points and I think I’m liking this new plan.  Yes I’m bummed that avocados aren’t zero but Oprah hasn’t replied to my message yet so that jury is still out.  What I am finding so far is that the more basic the recipe the lower the points.  Imagine that, if we eat real food…like nature intended…unblemished by chemicals or artificial sweeteners…the points are still pretty low.  They might be on to something here.

I bought a tube of Polenta way back when I considered trying the Simply Filling plan because everyone was going on and on about frying it up and not having to count it.  I never got around to doing anything with it and gave it away just before the expiration date.  While researching Smart Points though it popped back up on my master list I have made.  And it was just two Smart Points for what looked like quite a bit.  And everyone who has been following me for any length of time knows I eat with my eyes and want my plate to be full before I feel full.

My daughter gets married in 19 days (NINETEEN DAYS!) and she has already packed most of my non-perishable food up in hopes that her father and I will finally move out this weekend.  We already have the loft mostly ready, but we are struggling to leave our baby girl, our only child, our favorite and best puppy ever alone in that big house all by herself until the wedding day.  If I get home from work and my clothes are packed I’ll take that as a sign she is ready for us to go haha.  So since we are not grocery shopping until we move, this morning I had a little salsa left, a few black beans, and of course I always have eggs.  Time to try that polenta.

Huevos Yummos – 5 Weight Watchers Smart Points

Ingredients:

  • 1 farm fresh egg (or at least cage free…I believe happy chickens lay happy eggs)
  • 1″ slice of polenta (I used Trader Joe’s organic)
  • 1 Tbsp salsa (I like it hot hot hot!)
  • 2 Tbsp organic black beans
  • Fresh ground black pepper to taste
  • Smart Balance Non Stick spray

Spray a small pan with non stick spray.  I use a Jole egg pan because a) it makes just the right size for one egg and b) it’s adorable

Crumble the polenta up and then re-pat it firmly into the pan.  I used a ladle to press the rest of the way down to make sure it stuck back together.  “Fry” this on medium high for 6-8 minutes or until the top edges are starting to turn brown.  Crack the egg and add on top of the polenta.  Cover lightly with aluminum foil and continue cooking for 4- 5 more minutes or until the center of the egg is beginning to just get firm.  Add the black beans and salsa and continue to heat another minute or so to heat that up.

After the egg is completely set and everything is warm remove from heat and let this “set” for just a few minutes.  Using a spoon carefully lift the polenta from the sides and bottom of the pan.  Then gently slide the entire thing from the pan and onto a plate.  Add the fresh ground black pepper and enjoy!
