Sometimes peer pressure can be a good thing.

Just when I think I’ve tried everything one of the If You Have an Egg Facebook Group girls finds something I haven’t even heard of. Acorn. Butternut. Yellow. Zucchini. Spaghetti. I thought I had tried all the squashes.

Apparently not.

So you know how this goes. They are all emptying the shelves at Trader Joe’s gathering up Delicata Squash. And baking it. And eating it. And I tried not to get sucked in. I really did!

But then I thought Air Fryer. And I had to try it. I had to!

Air Fryer Delicata Squash

Ingredients

Sweet version

  • 1 Delicata Squash
  • 1 Tbsp Truvia Baking Blend (or other sugar of your choice)
  • 1 Tbsp ground cinnamon
  • Trader Joe’s Coconut non stick spray (or similar)

Savory Version

Use the same ingredients and directions but replace Truvia and Cinnamon with 2 Tbsp Nutritional Yeast and savory seasoning of choice (I used Dean Jacobs Bread Dipping Seasoning)

Instructions

  1. Wash and pay dry one delicata squash
  2. Cut in half and remove seeds with a spoon
  3. Slice into crescent shapes including rind
  4. Place rings on a parchment paper
  5. Spray slices with non stick spray, flip and lightly spray again
  6. Sprinkle with Truvia and cinnamon
  7. Bake in air fryer for 8 minutes on 400 while you get ready for work, school, or whatever today holds!
