I received a picture today of my husband camping.  Alone.  In our driveway.  Underneath the picture he had captioned “Happy Camper”.

While my husband was away at a three day men’s retreat last weekend I may have mentioned that I was ready to run away with him and go camping.  He’s always up for a camping trip whether it’s in the mountains, at the beach, Disney is definitely a favorite…or yes, in the driveway.  Seriously.  Of course we camp in a fifth wheel with three slideouts and if we are really roughing it we camp in *gasp* a hard side pop up.  Regardless,  there is a minimum queen size bed and flushing commode.  Mandatory.  We also always have a working stove and a grill.  No one will be starving on a camping trip with this family, it’s our civic duty to make sure the bears are happy if they choose you as their dinner companion.

When I brought tonight’s creation out and asked for a name we came up with several but my husband kept saying “no, it’s a campfire pocket”. But we’re not camping.  “It’s still a campfire pocket”.  He’s in the mood to camp, I am a willing volunteer, and these would be just as easy at the campground as they are in the driveway.  Campfire pockets it is.


Apple Cider Hobo Campfire Pockets – 6 Weight Watchers Points Plus

Ingredients:

  • 4 oz raw chicken breast
  • 1 small potato sliced thinly
  • 1/8 cup Bragg Apple Cider Vinegar
  • Trader Joe’s BBQ Rub & Seasoning with Coffee and Garlic
  • 4 stalks fresh asparagus trimmed
  • Generous handful fresh French Cut Green Beans
  • Smart Balance non stick spray


 Put chicken breast and Braggs in a ziplock bag and allow to marinate for about 10 minutes while you prepare the pocket.

Take a good size piece of heavy duty aluminum foil and fold up the edges to make a “pocket”.  Spray the inside of the pocket with non cook spray.  Layer sliced potatoes, asparagus, and green beans


Add the marinated chicken breast to the top and then sprinkle generously with the TJ’s rub.


Add another sheet of hd aluminum foil to the top and roll edges together to seal the foil and finish the “pocket”.


Preheat oven to 375 degrees and bake for 30-35 minutes or center of chicken is completely done.  Beware, the smell will attract willing diners way before it’s ready…enjoy!
