Bacon.


Have y’all noticed how many times in a week I say the word bacon?  When I started my Weight Watchers journey 20+ years ago we couldn’t eat bacon.  You could have all the tuna you could eat.  Cottage cheese fountains were flowing.  But bacon?  In our dreams.


But Weight watching has changed.  And I’ve changed.  I used to think if it tasted good…I mean real good…that it was off plan.  And if the food was off plan then I was too.  And if I’m off plan then that must mean the plan doesn’t work.

Well Smart Points works.  And more days than not I’m on plan.  And bacon?  Bacon is on this plan.



Bacon Egg Cups: 3 Freestyle Smart Points per serving (6 servings)

Ingredients:

  • 3 slices Light bread
  • 6 slices one point bacon (I use either Applegate Uncured Sunday Bacon or Appleton Farms Uncured Bacon (Aldi) or Trader Joe’s Uncured Bacon
  • 1 serving my recipe Secret Recipe Scrambled Eggs Secret Recipe Scrambled Eggs
  • 1 cup fresh baby spinach torn into small pieces
  • 1 cup fresh muchrooms diced
  • Non stick spray
  • Fresh ground black pepper

Preheat oven to 400F and spray 6 regular size muffin cups with non stick spray.  Using a 2″ biscuit cutter (or I use the lid to an old round tin spice container) cut two circles out of each slice of bread.  You will get a little crust and they may overlap a little.  Hold onto those scraps…you can use them for bread pudding later!

Place one bread circle in the bottom of each muffin cup.  Gently wrap one piece of bacon loosely around each bread circle using the muffin cup to guide it to make the sides of the muffin.  Add 1/6 of the spinach, the mushrooms and the Secret Recipe Eggs to each muffin cup and place in oven.  Bake for 18 to 20 minutes or until bacon is getting crispy.  Add fresh ground pepper and serve while hot!

p.s. If you can keep everyone out of them, these freeze and reheat well!
