I don’t always spend points on potatoes, but lately I’ve been craving a loaded baked potato so I’m bringing all my egglettes along for the ride! To satisfy my craving without going too far overboard, I’m combining a few of my favorite WW-friendly recipes for this potato.

I used russet potatoes in the demonstration but you can make any variety of potatoes that you like in the air fryer using my simple Air Fryer Baked Potato recipe. Once you’ve cooked your potato to fluffy perfection, follow along with the recipe below to load it up with goodies! (Or top with your own favorite toppings – just be sure to count your points!)

Yield 1 baked potato

6 SP Blue | 8 SP Green | 2 SP Purple

Instructions

  1. Prepare your your favorite variety of air fryer baked potato
  2. Add chicken breast tenderloin to your air fryer basket and lightly spritz with oil (Evo sprayers are perfect for this!) or nonstick spray
  3. Sprinkle with nutritional yeast and DAK’s ranch seasoning
  4. Cook on 360 for 18 minutes in the air fryer, flipping halfway through
  5. Once potatoes and chicken are cooked, cut your potato open and top with pieces of chicken (about 1 chicken tender’s worth), crumbled candied bacon (about 1 slice worth), and a dollop of DAK’s ranch dressing
