I can’t even remember what started this conversation but before I knew it we were discussing crack.  And slaw.  And it was food.  And it sounded good.

My WW buddy Karan has shared some pretty interesting things that she has run across during her journey.  She introduced me to Jalapeno Skinny Pop.  Her love and subsequent experimentation with a certain chocolate waffle recipe from our mutual friend Suzanne is unlimited (and always seems to involve peanut butter!).   So of course she would be the one to share a recipe called crack slaw.  It really only makes sense.

Karan’s shared recipe looked sooooo yummy….and since it’s called crack I knew I was going to have trouble stopping once I started.  So this hack had to be Weight Watchers friendly.  Or else.  So I hacked it.  And then tested it on civilians.  I made a double batch the first go round….and brought back one spoonful.  Just one.  The civilians loved it.

Crack Slaw…WW Style!  (4 servings, approximately 1 cup each)  4 Weight Watchers Smart Points / 5 Points Plus

Ingredients:

  • 1 package (10-15 oz) Angel Hair Slaw
  • 1 pound 99% lean ground turkey
  • 3 green onions (optional)
  • 2 Tbsp Bragg Liquid Aminos
  • 1 tsp Sriracha (I add more to mine but hubby says it’s “warm”)
  • 1 tsp Truvia Baking Blend
  • 2 tsp Spice World Squeeze Ginger
  • 1 clove minced garlic
  • 1 Tbsp White Vinegar
  • 1 Tbsp Toasted Sesame Oil
  • Salt and pepper to taste
  • As a last minute addition to my serving I added 1 tsp Trader Joes Super Seed & Ancient Grain Blend for 1 more SP

Brown turkey in a large skillet.  Drain and set turkey to the side.  Heat oil in the same skillet to medium and add minced garlic and ginger.  Sautee for 2-3 minutes.  Add vinegar, sriracha, Bragg Liquid Aminos and Truvia and sautee for one more minute.  Add cabbage and optional green onions and sautee for 5-6 minutes.  Add the turkey and heat through.  If you’re like me swirl a little more sriracha on top and serve immediately.  It was even good the next day cold!
