We’ve been having so much fun on Sunday Nights with our Facebook Live Chats and this week is my favorite so far.  I never ate breakfast before WW.  That meal was reserved for all you can eat buffets on Sunday morning or bags of biscuits while heading down the road.

But real breakfast?  And cook it myself?  Ugh.  No.  Don’t make me.  I thought these home versions  had to be elaborate variations of eggs and lard and meats and biscuits.  My grandmother always looked like she worked hardest when making early morning meals.


But you have to start your day.  You wouldn’t get in your car and head out without making sure it has gas.  It sounds cheesy but this is literally the same concept.  You have to fuel up.  You have to get your engine going.  You’re going to have to eat a little something…it doesn’t have to be an egg….but of course you all know I’ll love you more if it is 🙂


When I got started on my breakfast journey I search high and low.  Far and wide.  What oh what could I possibly make easily, freeze if necessary, and have ready when I am?  I won’t make you look so hard.  Here is just one idea….be sure and watch our chat for more!

Easy Breakfast Casserole: 3 Freestyle Smart Points (4 servings)

Ingredients:

  • 4 slices white bread
  • 1 egg
  • 1/4 cup egg whites
  • 1/4 cup fat free Ricotta
  • 1/4 cup unsweetened almond or soy milk
  • 4 Tbsp Kirkland Crumbled Bacon (or similar)
  • 1 cup baby spinach
  • 1 cup mushrooms
  • 1 Tbsp Nutritional Yeast

Preheat oven to 350F.  Spray a square oven safe pan with nonstick spray.  Cube bread or tear into small pieces and set aside.  Mix liquid ingredients and blend with a fork.  Tear spinach into small pieces and dice mushrooms.  Add remaining ingredients including bread cubes to the liquid mixture.  Let sit/soak for 15-20 minutes.   Pour/spread evenly into pan and bake for 35 minutes or until center is done.  Cut into 4 servings and serve warm.

This freezes well!!  Cool completely first, place slices between pieces of parchment paper and then in zippered freezer bag.  Best reheated in a toaster oven but you can microwave in a pinch.  Enjoy!!!
