Nana has almost overwhelmed me with the number of yummy yet simple vegan dishes she has been preparing.  Now before you meat eaters scroll on by hear me out.  I drink cow milk.  I love me some bacon.  And I promise I would never ever lead you astray.  These recipes are healthy, simple, and best of all delicious.  You will come out on the other side of this meal unscathed.  You may even make some new friends.  For those of you who already enjoy meatless meals…let the rejoicing begin!


One of Nana’s newest finds is Beyond Beef Crumbles made by Beyond Beef.  I find this meat substitute made from pea protein oddly satisfying. It has the consistency of very finely ground beef and honestly I’m not sure I would have realized it wasn’t beef when used in her recipes.  According to the Beyond Beef website:

Fiesta Stuffed Veggies – 1 Weight Watchers Smart Point per serving

Stuffed Onions (8 servings) Ingredients:

  • 4 large red onions, sliced in half and center scooped out (save for later)
  • 1/2 cup Beyond Meat Feisty Crumble
  • 1/2 cup yellow corn kernels (fresh, canned or frozen)
  • 1/4 cup diced Roma or plum tomatoes
  • Olive oil non stick spray

Stuffed Mushrooms (6 servings) Ingredients:

  • 12 large button mushrooms stems removed
  • 1/2 cup Beyond Meat Feisty Crumble
  • 1/2 cup yellow corn kernels (fresh, canned or frozen)
  • 1/4 cup diced Roma or plum tomatoes
  • 1/4 cup diced red onions (from above)
  • Olive oil non stick spray


Line a cookie sheet with parchment paper.  Place onion halves and mushrooms on the sheet and stuff evenly with mixture.  Spray each one liberally with non stick spray.  Bake at 325 for 30 minutes allow to cool slightly before eating, filling will be hot!  Then eat eat and eat some more, these are healthy, low point and yummy!
