Game Day Pizzas: Sriracha & Garlic BBQ Chicken Pizza – 8 Weight Watchers Smart Points

My East Tennessee allergies are killing me this week so I’ve been hunting for things that a) I can actually taste and b) might open up my sinuses a little.  Yesterday I was worn out after a long day of standing up talking to potential customers so I picked up Hot & Sour Soup at our neighborhood Chinese take out.  The very nice man suggested I take the homemade hot mustard rather than the packaged variety because it “has more hot”.  Boy was he right…that burned right through my nasal passages and up through the top of my head.  So still needing that kick but not wanting to further damage brain cells I opted for Sriracha today.  And guess what?  It’s game day.  So you know what means right?  Game Day Pizzas!

So one of the things I love almost as much as game day pizzas is Trader Joe’s Sriracha and Roasted Garlic BBQ Sauce.  Boy howdy is that stuff finger licking good.  I have actually “accidentally” gotten it on my fingers before so I had to lick it off.  By my math allergies + sriracha + game day = Sriracha & Garlic BBQ Chicken Pizza!  My version is also meatless but you can exchange grilled chicken if you prefer.  No one will know though if you don’t!

Sriracha & Garlic BBQ Chicken Pizza – 8 Weight Watchers Smart Points

Ingredients:

  • 1 Stonefire Mini Naan (or Trader Joe’s Pita)
  • 1 Trader Joe’s Chickenless Tender for the meatless version (or 1 oz grilled chicken)
  • 1 Tbsp Trader Joe’s Sriracha & Garlic BBQ Sauce
  • 1 oz fresh mozzarella
  • Non stick cooking spray

Place Naan or uncut pita on a cookie sheet lined with parchment paper and spray with non stick spray.  Preheat oven to 375 degrees.  Cook the Chickenless tender according to package directions, chop or tear into good size chunks and toss in the TJ Sriracha BBQ until evenly coated.  Cut mozzarella into large chunks and place both on top of Naan spread evenly across the surface.   Bake on 375 for 15-18 minutes or until cheese begins to bubble.  Switch over to broil for 2-3 minutes.  Remove carefully from oven and prepare to spice up your life!  

Public Service Announcement: hubby says you might want to try the Sriracha BBQ sauce first to make sure an entire tablespoon isn’t going to be too spicy.  Amateur 🙂
