Happy New Year!  In case you slept through it we welcomed 2016 just under 12 hours ago and we also welcomed a new member to our family.  As of 4pm New Years Eve I have a son in law.  My husband and I could not say no to this smiling face when he asked for our daughter’s hand in marriage.   And when we saw his reaction as the ushers opened the doors and his bride stepped in, we knew we had the right man for this job.  He wept.  We were moved.  It was lovely. 

I will make you look at wedding pictures at the bottom of this post but for now I want you to think about what you want for this new year.  Try new recipes?  Change your grocery list?  Find a go to meal that is simple, fast and fun?  If you picked one or all of those I have the recipe for you.  

Any of you following me on Instagram think I only shop at Trader Joes.  Not true.  I only visit TJ’s 3 or 4 times a month…yeah yeah yeah.  I also love me some Costco.  The first time I went in I was amazed and almost overwhelmed by their selection of healthy, many of them organic, and all yummy food selections.  These three are at the top of my list every time. We are never without!

  

WestEnd Cuisine Mediterranean Chicken Skewers
– 3 WW Smart Points for 2 skewers.  Moist, delicious, AND only #3SP?  Sold.  

  Hannah Organic Tzatziki Greek Style Yogurt Dip – 2 Tbsp for 2 WW Smart Points.  Dear Lord this is manna from Heaven.  I have licked the lid before…not kidding. #sorrynotsorry

  

That Pickle Guy Muffalata
– 2 Tbsp for 2 WW Smart Points.   When Costco has it in stock BUY IT.  You are going to be sorry if you don’t buy extra and run out. 

So why these three and what on earth am I going to do with them?  I was playing Refridgerator roulette one day and couldn’t find what I wanted so I ate some of everything “you’re a winner.  And you’re a winner and….” except I wasn’t winning anything.  Finally I had a tortilla chip in my hand and saw the yogurt dip.  Hmmm that might me like chip dip.  But I had to scoot the Muffalata over to get to it.  And then I saw the chicken.  And then … well the planets aligned and all was right with the world.  And my tummy.  I’m not even sure now that the chip ever made it to my mouth. 

  
Greek Grilled Chicken Salad Zoodles Version – 7 Weight Watchers Smart Points Value

Ingredients:

  • 1 cup Zoodles (zucchini noodles made with a Veggetti or similar.  If you don’t have a Veggetti first what is wrong with you?  Second you can sub zucchini strips or shredded but your lunch won’t be nearly as fun)
  • 1/2 cup fresh baby spinach
  • 1/4 cup fresh corn kernels
  • 2 WestEnd Cuisine Mediterranean Grilled Chicken Skewers torn apart into small pieces
  • 2 Tbsp Hannah Tzatziki Greek Yogurt Dip
  • 1 Tbsp That Pickle Guy Muffalata

Toss Zoodles, baby spinach and corn kernels in a big salad bowl (the Zoodles kinda grow when you toss them so I mean a BIG bowl). Add remaining ingredients.  Take a picture, then oooooh and ahhhhh at how pretty your new simple favorite meal is.

Ingredients:

  • 1 cup diced cucumbers 
  • 1/2 cup fresh baby spinach
  • 1/4 cup fresh corn kernels
  • 2 WestEnd Cuisine Mediterranean Grilled Chicken Skewers torn apart into small pieces
  • 2 Tbsp Hannah Tzatziki Greek Yogurt Dip
  • 1 Tbsp That Pickle Guy Muffalata

Toss cucumbers, baby spinach and corn kernels in a big salad bowl.  Add remaining ingredients. Take a picture, then oooooh and ahhhhh at how pretty your new simple favorite meal is. 

Trust me when I say you are going to eat this.  A lot.  Like every day.
