I’m almost embarrassed to post this as a “recipe”…but my daughter is getting married in 10 days and my time is limited, so here we go!

For Casey’s bridal shower we had amazing and wonderful million point homemade creamy salads and sweet treats.  Even the hot cider was a whopping 7 Smart Points per serving so my day was shot.  But your baby girl only gets married once so I planned around it as best as I could.  I walked two mornings and three evenings that week.  And I tried to load up on the zero point fruits and veggies.  But wow I didn’t want plain water to wash down all the buttery scones and shortbreads.  And sweet tea was definitely off the list.  My best friend loves me though.  And she always has my back.  So for my drink…my special one and only daughter bridal shower drink…she made me a refreshing and delicious ZERO point drink.  I love you Melanie.

Ingredients:

  • 2 cucumbers washed and sliced
  • 2 gallons spring water (or at least filtered)
  • 1 bag pellet ice (we call it rabbit poop ice if that helps with the consistency you are looking for.  Sonic carries the best if you have one in your area)

Add water to a very large glass jug (please make it glass if you can, the taste is far superb and the water will be colder I promise),  then drop in cucumbers, then carefully add as much of the bag of ice as you can.  Let it chill at least an hour before serving.  I was shocked…I thought for sure she had added some kind of sweetener but nope.  That’s it!  Enjoy, and if you don’t have a friend like Melanie you need to find you one 🙂

  1. How do you count ” no point” fruit when you blend in your smoothies?

Faye, fortunately because you are not blending anything on the cucumber water it is zero. If you added sliced fruit but did not squeeze it I would still count zero. BUT, if you are blending fruit to go in a smoothie or a shake type drink I would count 2SP per 1/2 cup. Hope that helps!
