Jalapeno Chicken Mac N Cheese – 12 Weight Watchers Smart Points per serving (2 servings)

I may or may not have given my husband the creeping crud.  He is pacing around our loft telling his crew guys that I brought home the plague and am trying to seek forgiveness by feeding him my world famous Chicken Jalapeno Mac N Cheese.  They are coaching him to ask for steak…trust me if I’m to be forgiven I chose the right meal.


When I have a cold I don’t eat.  Not well anyway.  The last two days I’ve existed on peanut butter crackers, applesauce, and hot tea.  Today I did manage to cram down half of a Quest bar and at lunch a bowl of instant soup I found in my desk.  Now that hubby is getting sick it’s time to eat real food.  Real comfort food.

I don’t like being sick.  Of course I don’t know anyone who does but I really really don’t.  But a crummy situation is slightly less crummy when served with a side of mac and a side of cheese.   And a bit of Jalapeno when your tastebuds aren’t tasting.

Jalapeno Chicken Mac N Cheese – 12 Weight Watchers Smart Points per serving (2 servings)

Ingredients:

  • 1 1/3 cups dry Trader Joe’s Oriechette pasta
  • 1 Tbsp light margarine (I use Smart Balance Light)
  • 1 Tbsp Fat Free Half & Half
  • 3 slices Velveeta (or other American cheese product at no more than 1 SP per slice)
  • 1 oz fresh mozzarella
  • 1 Tbsp diced Jalapeno
  • 3 skewers West End Mediterranean Chicken skewers or similar
  • Fresh ground black pepper to taste

In a medium saucepan bring 4 cups of water to a soft boil.  Add Oriechette and continue to boil for 12 minutes.  Turn heat down to low, drain pasta, return to pan and place back over heat.  Add both cheeses, diced Jalapeno, fat free half and half, and chicken torn into small chunks.  Cover lightly and heat for 5 to 6 minutes stirring several times.  Mix all ingredients thoroughly and add fresh ground pepper.  Serve immediately, this soothing food needs to comfort you while warm…and cheesy…and yummy.
