 But by it’s very definition simple means easy, no difficulty…even child’s play.  Except for the very sharp knife I used this was indeed so easy even a child  could do it.  Or better yet, so simple my husband can too.

And because this recipe is easy I will keep this post simple as well.  Enjoy!

Simple Solutions: Ciabatta Cheese Sticks with Marinara – 11 Weight Watchers Smart Points

Ingredients:

  • 1 Trader Joe’s Ciabatta Roll (75 grams)
  • Non stick Olive Oil spray
  • Italian Seasoning
  • 1 tsp Extra Virgin Olive Oil
  • 1 oz Bel Gioso Fresh Mozzarella (or similar)
  • 1/2 cup Victoria Marinara (or similar)

Preheat oven to 350 degrees.  Using a very sharp bread knife slice the roll in half lengthwise.  Then from the top to bottom slice through both pieces 4 times.  Separate the pieces and line up on their sides touching each other on a parchment lined cookie sheet.  Spray all pieces liberally with non stick spray.  Drizzle oil as evenly as possible over each slice.  Sprinkle seasoning over each piece.  Cut or tear the mozzarella into tiny bits and lay a few on each slice.  Bake for 10 minutes or until cheese begins to melt.  Switch to broil for 5 minutes or until cheese just starts to brown.  Keep an eye on them, don’t let them burn!  Heat marinara in a small glass bowl for 30 seconds in microwave.  Serve immediately with a nice salad or fresh veggies…enjoy!
