Some days you are going to plan perfectly, prep meals way in advance, and the planets will all align (including Pluto…because at my house it is still a planet) so that you have three lovely meals plus snacks that all fit nicely in your tracker.  Some days your lunchbag will still be sitting on the counter where you left it while the cat was hacking up a hairball and you were already late for work.

I had a hairball day which left me with two choices…send someone out to pick me up fast food or make something out of what I already had at the office.  I’ve been doing WW long enough to know I better keep some sturdy, won’t get stale quick, go to items on hand for these kinds of days.  And I also gave up pre-prepared frozen meals a long time ago because they never looked as good in my freezer as they did in the store shelf.  Especially on days when I knew there was a nice 7PPV cornbeef , beer mustard and light Havarti cheese sandwich sitting in my lunch bag on the kitchen counter.  At home.

Some items I always keep on hand for those kinds of days:

*Sturdy, easy to eat fruit like apples, bananas or clementines
*Laughing Cow cheese wedges or Baby Bels
*Low Carb tortillas in the freezer
*Smart Balance peanut butter
*Assorted 4 point snack bars
*Wasa crisps (they are already stale so they stay that way a looong time hahaha)
*Individual cups of unsweetened applesauce or fruit packed in water
*I could go on and on and on…

I’m not going to get all holier than though on you and tell you that I never veer from my plan.  That I never mess up.  That I never just throw my hands up and say forget it all…I’m eating chicken nuggets and waffle fries today and don’t you dare say anything to me about it.  I’m human too.  But like all humans I need a plan to start with to have a chance of a plan to stick with.  Speaking of sticking…this plan had peanut butter stuck all over it.

Simple Solutions: PB & Apple Pizza – 8 Weight Watchers Smart Points

Ingredients:

  • 1 firm apple – I prefer Honey Crisp or Cripps Pink
  • 1 Tbsp Smart Balance Chunky Peanut Butter (or another brand as long as 1 tbsp = 3SP or less)
  • 1 any brand 5 Smart Point or less snack bar that will crumble easily 

Core apple and then slice crossways into three big slices.  Pat the surface dry with a paper towel.  Heat peanut butter for 10-15 seconds so it will spread more easily, spread evenly across one side of the three slices.  Crumble snack bar and evenly distribute on top of the pb’d apple slices.  Watch people stare at you because you have a yummy PB & Apple Pizza and they are eating leftovers from a reused margarine container.  Yeah, you are the work lunch winner today!

    • Thank you Leslie! If you are on a tablet or computer there should be an area to sign up. If you are on a phone you have to scroll to the bottom and click “view full site” then scroll again until you find the magic empty box where you sign up to never miss a recipe.
