I’m not gonna lie. I love the fact that beans are back on the menu. I don’t get the people who are not. But I love a good dump soup recipe even more. Come on bean haters…if you don’t like it you never have to eat it again, but you have to try ONE BITE!
I’m fairly adventurous when it comes to trying food, my mom even more so. Her motto was always “if you don’t like it you never have to eat it again. But you have to try one bite”. She was true to her word. But she also never fed me anything she hadn’t already tried herself. And if I didn’t like it? Well it rarely ever happened….but when it did I was never asked to even look in its general direction. Ever. Again.
But this soup is sooooo yummy. And soooo easy. And my husband ate it willingly three days in a row. My accountabilibuddy chose it over beef stew for her lunch the next day.
Open. Dump. Heat. Eat. Tada.
Succotash Bean Soup: 0 WW Freestyle Smart Points (12 approximately 1 cup servings)
- 2 cans white beans (rinsed and drained)
- 2 cans Lima beans (rinsed and drained)
- 2 cans corn kernels drained
- 1 carton low sodium vegetable broth
- 12 slices Canadian Bacon chopped into small pieces
- Season to taste, I use Dak’s Everything But The Salt Dak’s Spices
Dump all ingredients into a large crockpot. Stir gently to evenly mix ingredients. Cook on low 6-8 hours. This is zero points…you have enough left for cornbread!
