If you’ve been following the hardboiled egg saga in my Facebook Support Group or you follow @ifyouhaveanegg on Instagram you know I can’t boil an egg.  Well I can, but by the time I get done you can’t peel it.  I can make all variations of eggs – frittatas, scrambled, fried, simple, fancy….but hardboiled escapes me.  I even tried baking them.  I officially give up.


But…lucky for me and now for you they sell them.  At the store.  And that store is Trader Joe’s.  And much to my joy and jublilation they are cage free eggs.  I don’t know about you but I am a firm believer that happy chickens lay happy eggs.  And if I can’t use eggs that my friend Bobbie’s chickens happily provided then I’ll settle for the next best thing.

Even better, since the eggs were already hardboiled I literally spent 5 minutes making these bacon-y beauties.  It will take me longer to wash the dishes than  start to finish to eat.  And only five ingredients?  Let’s go!

TJ’s Five Below Club:  BLT Deviled Eggs – 2 Weight Watchers Smart Points per serving (4 servings) (2 Points Plus per serving)

Ingredients:

  • 2 Trader Joe’s Cage Free Hardboiled Eggs cut in half
  • 2 Tbsp Trader Joe’s Sweet Onion & Bacon Vinaigrette
  • 1 slice Trader Joe’s Center Cut Uncured Bacon cooked to crisp and patted in a paper towel
  • 1/4 cup shredded fresh baby spinach
  • 1 Tbsp diced tomatoes (I prefer Roma)

Take each egg half and gently squeeze it until the yolk falls out.  You may have to gently pry with a spoon too, but since these are professionally hardboiled they pretty much popped out.  Put egg whites on a plate empty side up.  (I will pause here and say my paternal grandmother would be disappointed…Not only did I not use full fat mayo in these eggs, I did not use the Baptist church lady approved egg plate either.  Sorry Granny Green).  Add yolks and all other ingredients to a bowl and mash to blended with a fork.  Gently add filling back to the empty egg whites and try not to eat them before you give someone else a chance to fight you for them.
