On a glorious and beautiful Sunday afternoon we attended the bridal shower of literally Kc’s oldest friend.  Andrew (or Andy Poo as we liked to call him) was only a few months old when we moved in next door, Kc was just shy of two.  The mom is my accountabilibuddy Karen and I was honored to attend her soon to be daughter in law’s special day this week.

When we arrived at the sweet brunch line though I was even more honored…or my belly was anyway!  Holly’s Cafe of Knoxville fame provided the savory and the sweets.  I’m not going to pretend like what I’m about to show you is any real substitute for her creation.  If you get an opportunity (and have the points) I highly recommend a visit to Holly’s …you simply must!

 

 

WW Candied Bacon, 1 FSP per serving!

Everything was divine but the Candied Bacon…oh my the Candied Bacon…let’s just say I went straight home and recreated it WW Style.  I had to grab an extra piece to make sure I had all the data I needed (hahaha) before everyone else snagged it up!

WW Candied Bacon: only 1 Freestyle Smart Point per serving!

Yield 12 pieces

Alone.  Crumbled up as a salad topping.  On a potato.  So savory...so sweet...so oh my!

 

One serving is 2 pieces, for 1 Freestyle Smart Point!

Ingredients

  • 6 slices Trader Joe's Uncured Dry Rubbed Bacon (or any equivalent 1 point per slice bacon, turkey bacon would work well, I'm going to try Smart Bacon soon!)
  • 1/4 cup Cary's Sugar Free syrup (or equivalent)
  • 3 tsp Truvia Baking Blend (or similar)
  • 2 tsp Dak's Spices Red Mountain Rub (or your favorite seasoning) - order the Dak's here and remember to use our Affiliate code EGGLADY to receive 10% off at checkout!

Instructions

  1. Cut each slice of bacon in half cross wise (the wide direction not the skinny long direction)
  2. Add 12 "pieces" of bacon to a zipper bag + syrup + spices and knead them to coat well
  3. spread in the bottom of you seasoned Simple Living Products Air Fryer (or similar) in one layer.  it's ok if they touch each other but they will curl more
  4. Cook on 380F for 8 minutes, check and if needed cook 2 more minutes.  Cooking time may vary by air fryer manufacturer
  5. Enjoy!  2 "pieces" equal 1 serving for only 1 Freestyle Smart Point!
