So easy, so versatile...I could eat this every day! Great with Bragg Liquid Aminos as a "soy sauce" and I added some hot Chinese mustard for a pa-pow at work last week!
1 Blue / 1 Green / 1 Purple Smart Point on WW My Way!
Ingredients
16 oz bag of riced cauliflower (or rice your own!)
1 egg + 1/4 cup egg whites
1/4 cup diced onions
1/2 cup mixed frozen veggies (like peas and carrots)
Heat oil to medium in a large skillet and add garlic. Saute for one minute
Add frozen vegetables, onions and only the white portion of the scallions and continue to saute for 3-4 minutes or until soft
In the meantime add egg and egg whites to a microwave safe dish, whisk together until blended with a fork and microwave on high for one minute. Break up with the fork, stir and microwave again for 30 seconds to a minute until cooked through. "Scramble" with a fork and set aside
Increase heat to medium high and add the cauliflower rice and Bragg Liquid Aminos, stir and cook for 5 - 6 minutes
Add egg scramble, green portion of diced scallions, mix one more time and serve!
