So easy, so versatile...I could eat this every day! Great with Bragg Liquid Aminos as a "soy sauce" and I added some hot Chinese mustard for a pa-pow at work last week!

Instructions

  1. Heat oil to medium in a large skillet and add garlic.  Saute for one minute
  2. Add frozen vegetables, onions and only the white portion of the scallions and continue to saute for 3-4 minutes or until soft
  3. In the meantime add egg and egg whites to a microwave safe dish, whisk together until blended with a fork and microwave on high for one minute.  Break up with the fork, stir and microwave again for 30 seconds to a minute until cooked through.  "Scramble" with a fork and set aside
  4. Increase heat to medium high and add the cauliflower rice and Bragg Liquid Aminos, stir and cook for 5 - 6 minutes
  5. Add egg scramble, green portion of diced scallions, mix one more time and serve!

Notes

Great for meal prep!  Freezes well in the Meal Prep Haven containers we use at home and work
