Literally the easiest and most fluffy french toast you've ever made.  And if you will be patient and let the waffle iron heat up before you spray it, the easiest to clean up too!

  1. Start the waffle iron to heat according to instructions while you get everything else ready.  
  2. Liberally spray both sides of the waffle iron and then the bottom of the slice of bread.  
  3. Place bread on the bottom griddle and lightly press the middle with a spoon to just barely indent and evenly spread the ricotta.  
  4. Then carefully crack egg in the center of the slice and then add egg whites around the edges to make sure the bread is completely saturated and the whole egg is "contained" in the middle.  Don't worry if some runs down, it's all going to cook.  Sprinkle with the crumbled bacon (optional) and close the top.  
  5. Let cook for approximately 5 minutes or until you can smell the yumminess.  
  6. Gently lift the top a little to check and if the egg is set you are ready to go.  
  7. Gently open completely (if it needs a little help letting go gently poke with a spatula) and unplug the waffle iron.  Wiggle a spatula under the bread and try to lift out in one piece.  I was actually surprised how well it all held together...even the parts that had oozed off the bread!  I added 1/8 cup of sugar free syrup for zero points or if you'd rather have 1/4 cup it's only 1 SP more!
  8. Turn to your spouse, child, or whatever witness you have handy who is standing their with mouth gaping because you are now a hero.
