This was a “more days left in the week than groceries in the fridge” scenario.  You should see what I found in my work drawer to throw together for lunch.  Let’s just say it turned some heads.

I had to squeeze one more evening meal out for dinner as well before the short-list run to the store.  We are hopefully leaving on Thursday for a much needed summer break.  It’s a toss up, stock up…don’t stock up…buy things we can take with us…what to do, what to do?


Well lucky for us I’m the leader of the dribs and drabs brigade.  Once again I was standing with both the fridge and freezer doors open when hubby came in.  “Uh oh….what’s it gonna be?”   I don’t know yet but you will eat it.  And you will like it.

One of the drawers I pulled open burst forth with what was left of a yummy container of Trader Joe’s Artichoke & Jalapeno Dip.  Well how was that still in there?  And there’s not much. But that can’t go to waste.  Have you tried it yet?  It must be consumed!


Jalapeno Artichoke Cheesy Bacon Flatbread – 11 Freestyle Smart Points (2 servings)

Ingredients:

  • 2 Stonefire Tandoor Mini Na’an (or other Naan equivalent no more than 5SP / 4PP per serving) or 1 Trader Joe’s Ciabatta Roll
  • 1 slice Velveeta cheese product or Trader Joe’s Low Fat American Cheese
  • 1 Laughing Cow Babybel Mini
  • 1 oz Fresh Mozzarella
  • 2 Tbsp Trader Joe’s Artichoke & Jalapeno Dip
  • 2 Tbsp crumbled bacon (I use Kirkland crumbled bacon from Costco) or two cooked slices Trader Joe’s Uncured Dry Rubbed Bacon cooked crisp and crumbled
  • Non stick spray

Line a cookie sheet with parchment paper and preheat oven to 350.  Place both Na’an on sheet (or if using TJ Ciabatta slice and turn on side) and lightly spray with non stick spray.  Spread dip evenly over each one.  Tear up each kind of cheese into small chunks and place evenly on each Naan/Ciabatta slices.  Divide bacon in half and sprinkle over both.

Place in oven and cook for 10 minutes.  Switch to broil and cook for 2 to 3 minutes or until cheeses start to bubble.   Remove and allow to set for 5 minutes so the cheese doesn’t slide off.  I cut mine with a pizza cutter on the diagonal to make it “fancy” hahaha.  This fridge clean out creation will be in our regular rotation!
