We’ve already discussed the extreme obsession that my husband and I have with all things Disney.  Well all things that get us to Disney.  Hubby can recite on demand, no warning, without looking at a calendar how many days we have left until our next trip to see the mouse.  Any day.  Any time. One of the owners of the company he works for said “John gets a childlike grin and looks peaceful even when someone just mentions Disney”.  It’s true.  Just being on property…even if we never step foot outside of Fort Wilderness Campground…is our happy place.

And more good news, all of our favorite Orlando eating establishments are on Disney property and just a magical bus ride away.
 We have our list of top favorites, the ones we make plans to visit every single time we darken the castle doors.  Two years ago we stumbled upon a lively Latin establishment in what was then Downtown Disney simply because of one picture on their marquee “Crazy Corn”.  And it was smothered in cheese.  How could we resist?

  
Over $80 and a million WW points later though we both agreed this was our last Disney Springs cheesy corn adventure.  This dinner trip was $20 more than just six months ago plus our tummies just aren’t used to that much grease.  Time to recreate the crazy!


Crazy Corn: 6 Weight Watchers Smart Points / 5 Points Plus (2 servings)

Ingredients:

  • 1 1/4 cup Trader Joe’s Roasted Corn (frozen)
  • 1 BabyBel Light Mini
  • 1 Tbsp Trader Joe’s Fat Free Crumbled Feta Cheese
  • 2 Tbsp Trader Joe’s Shaved Cheese Blend
  • Non stick spray
  • Dean Jacobs Italian Bread Dipping Seasoning (or other italian seasoning)

Spray a small crock bowl or small glass baking dish with nonstick spray.  Preheat oven to 350 degrees.  Add corn. Tear apart the babybel and distribute evenly over the corn. Evenly sprinkle the crumbled feta on top. Last add the shaved cheese and top all with a generous amount of seasoning.  Bake uncovered for 30 minutes and then broil for an additional 5 minutes or until cheese bubbles.  This will be HOT.  And you are going to want to eat it as soon as you smell it.  Be patient.  Your currently unburned tastebuds will thank you later.
