Oh you wanted more information? I thought for sure bacon would be enough.

I love tender fresh asparagus. Hubby is not such a fan. I rarely buy it because I know it’s just going to get to the end of the bunch and have to go in an egg mug or sautéed or something other than what I intended.  He wants it canned and mushy.  I want it fresh.  Tender yet crisp.  It’s a war I’m not going to win so why even battle?

But bacon.  There is just something about its porky perfection that can make even the most reluctant diner wave the white flag and pull a chair up to the truce table.


Bacon Wrapped Asparagus: 1 Blue / 1 Green / 1 Purple

Yield 4 bundles

Ingredients

  • Approximately 20 stalks of thin fresh asparagus
  • 4 slices Applegate Sunday Bacon (or other 1 SP per slice bacon)
  • 1 Tbsp Bragg Nutritional Yeast
  • Dak's Spices or similar (I use Red Mountain Rub)
  • Non stick spray

Preheat oven to 400 degrees and line a cookie sheet with parchment paper. Divide asparagus into four bunches.  Wrap each bunch starting at the bottom with one piece of bacon and spiral up to the top.  Lay each bundle on the parchment covered cookie sheet.

Bonus!  You can now also enjoy this from your Air Fryer in just 8 minutes!  It takes me longer to find the corner to peel on the pack of bacon than it does for this to cook.  Follow the oven directions to prep but place in a single layer in your air fryer basket.  (I have a Simple Living Products 5.8 Quart Digital)  Set AF to 380 degrees for 8 minutes and tada!  Or voila!  Or better yet…hoorah!!

Smart Points values are the same but clean-up is a breeze because all the grease is now in the tub below!

Spray each bundle with non stick spray.  Sprinkle evenly with nutritional yeast and then with the Dak’s or similar spices.  If you don’t have a favorite seasoning  you can just salt and pepper to taste.  Bake for 15 to 18 minutes or until bacon starts to brown.  Remove from oven before oven before bacon gets crisp or it will fall off.  Try not to eat them all.  Or if you are home alone it’s 4 points…go for it.
