This isn’t my recipe. Heck it isn’t even my idea. But whoever you are…I ❤ you.
The premise behind this genius is to take a boxed cake mix, just an ordinary mix. And make it Smart Points extraordinary. Did you know one box of Angel Food cake mix contains 84 points. Before you hyperventilate hear me out. You’ll be happy you did.
The beauty behind this is that there are only two ingredients. And the second one has no points. See? You’re starting to breathe again.
Two Ingredient Pineapple Angel Food Cake: 2-4 Smart Points per serving
Ingredients:
- 1 box Angel Food Cake mix
- 20 ounce can crushed pineapple packed in juice
- Optional add strawberries and fat free whipped topping (1 SP) to make a Pineapple Strawberry Shortcake
Combine cake mix and entire can of Pineapple including juice in a large bowl. Mix on medium speed for 3 to 4 minutes.
For mini muffins (2 SP each): spray mini muffin pan liberally with non stick spray. Bake on 350 for 20 minutes or until tops are golden
For doughnuts (3 SP each): spray mini doughnut pan liberally with non stick spray. Bake on 350 for 20 minutes or until tops are golden
For cake (3 SP for 2 x 2 square): spray 9 x 11 pan liberally with non stick spray. Bake on 350 for 25-30 minutes or until tops are golden and a toothpick inserted in center comes out clean
Make 42 for 2 SP each and 24 for 3 SP each
