In 17 days I turn the big five-oooh.  Half a century.  Two times twenty-five.  

While I’m not thrilled that time is marching on so quickly some pretty darn amazing things have happened.  I feel better and weigh less than I have in the last quarter century.  I just found out that grandbaby number one is on the way.  And I am currently riding shotgun to my best friend of 35+ years to a birthday celebration that only he could dream up.  This time Monday I will have just completed my shift as Dolphin Trainer for a Day at Marineland.  Training marine animals was my chosen profession when we were young and didn’t have bills.  I get to experience that in less than 48 hours. This second half of my life is looking pretty good.  


During my first 48 rotations around the sun I didn’t eat breakfast. I barely cooked.  An adventure was adding extra cheese on a delivery pizza.  

But now I start my day with an adventure.  Every day. And as I get older and wiser these adventures get more adventury.  I know that’s not a word, but I’m gonna be a Nonna soon…I get to make up words whenever I want now. 


Cheese grits.  Shrimp.  Adventure awaits!

Shrimp & Grits Breakfast Bowl: 4 Smart Points

Ingredients:

  • 1 packet Quaker Instant Cheese Grits
  • 1 ounce shrimp (I use Trader Joe’s medium cooked frozen shrimp)
  • 1 Tbsp Kirkland Crumbled Bacon (Costco) or similar
  • 1/4 cup Egglands Best 100% Egg Whites or similar
  • 1/2 cup sliced mushrooms
  • 1/2 cup baby spinach
  • 1 Tbsp Bragg or Trader Joe’s Nutritional Yeast
  • Non stick spray
  • Fresh ground pepper to taste

Spray a microwave safe dish with non stick spray.  Add egg whites and microwave for 60 seconds on high.   Remove from microwave and fluff with a fork.  Set aside. Spray a skillet with nonstick spray and heat to medium.  Saute the shrimp and mushrooms for about 5 minutes, add bacon crumbles and sauté an additional minute.  Add spinach and just sauté until it starts to wilt and then remove from heat.  Add packet of cheese grits and the nutritional yeast to the egg whites…do not stir!  Add 4 ounces of hot water (I use my Kuerig directly into the bowl!) and stir.  Allow to sit approximately one minute, stir again and then add the shrimp mixture from the skillet.  Add fresh ground pepper to your taste and enjoy the breakfast adventure you just embarked on.
