Nana’s Vegan Pancake Mix (it’s good for us meat eaters too!) – 6 Weight Watchers Points Plus per 1/2 cup dry mix

We all know Nana is smart but sometimes she’s a genius.  This is one of those genius moments.

Nana is also vegan, self determined for health issues so don’t go all no honey on me when I combo it later in another recipe with very non vegan ingredients.  It’s ok.  If you are a strict vegan this base mix is for you…just keep it “V” friendly and we will all be fine.  If you’re like me and you just need a delicious, good for me, easy low point way to have pancakes on a moment’s notice then here ya go.


Nana is also a big recycler which means she will use a container/package/bag until it is slap worn out.  I mean slap.  Worn.  Out. For this mix she has written on a zip close bag in permanent marker so that a) she can remake the dry mix and refill without any scrambling for a recipe and b) the instructions are right there.  She can make as little or as much as she needs.  I love the way Nana’s brain works.  I was blessed with this bag of my own…notice it’s almost empty, I use it ALOT and have already refilled it three times hahaha.

Nana’s Vegan Pancake Dry Mix – 6 Weight Watchers Points Plus per 1/2 cup dry mix

Dry Mix Ingredients:

  • 2 1/2 cups whole wheat pastry flour
  • 1 cup fine ground cornmeal
  • 1/2 cup quick oats
  • 1/4 cup packed brown sugar
  • 2 tbsp baking powder
  • 1/2 tsp fine sea salt

I literally just dump all that in the bag, zip it up tight, and knead it gently until it’s thoroughly mixed.  That’s it!

(Note:  Nana’s instructions say 1 cup mix and 1 cup mylk plus 1 tsp vanilla.  She makes two batches and freezes half for later.  Remember, I told you she was smart. BTW Mylk = any non dairy milks like unsweetened almond, soy or coconut milk)

For Plain Pancakes at still 6 WW PP add 1/2 cup NVPDM and 1/2 cup any kind unsweetened mylk plus 1/2 tsp vanilla. Mix gently with a fork until moistened but don’t worry about small lumps.  Heat on a griddle sprayed with non stick spray and cook on medium each side for 2-3 minutes or until barely browned and set.  You may also like these other recipes made with Nana’s Dry Mix!
