Ever have a “bAbAm, wOw, why didn’t I think of that before” moment? I was adding some fat free ricotta to our scrambled eggs to give them some more fluff without the points and my bells started ringing. I love my egg mugs. I love how easy they are. I love the texture and consistency. But I don’t love the thought of adding a different cheese and jacking up the points. But fat free ricotta…hmmm that may work.
Yesterday I made an entire package of bacon which drove my dogs absolutely INSANE. The time change was the night before so all the two legged animals in my house were still trying to figure out when to wake up or whether to sleep in. Until they too smelled the yummy yum smell of real pork bacon. There’s nothing quite like it is there? Even vegetarians will turn for another whiff of that. I doled out the appropriate allotment per customer, both animal and human alike, and then let the rest cool for bagging up. One slice of bacon is only ONE point. Uno. Can you believe it? Now that said, I have no clue what an entire package of bacon is if you accidentally eat it too, so stay with me on this one and package up the rest and put it away….
BONUS for hungry mornings! I also decided to start adding 1/8 cup of egg whites to bulk it up just a little but without any extra points. Makes it extra fluffy and my mind thinks they are bigger so my tummy gets tricked into thinking they are filling me up more. It’s a game we play.

BLT Egg Mug, New & Improved! – 3 WW Smart Points (3PPV)
- One farm fresh egg (or I use Trader Joe’s cage free brown eggs when my friend’s hens are being fussy)
- Diced Mushrooms (I prefer baby bellas)
- Diced tomatoes
- 1 tbsp Hormel Real Bacon Bits or 1 slice of crispy bacon (check your bacon, some varieties are 2 points per slice…you want 1 point per slice!)
- 1 Tbsp Fat Free Ricotta Cheese (I use Trader Joe’s)
- 1/8 cup Egg Whites
- Fresh kale and/or baby spinach
- Fresh ground black pepper
- Olive oil non stick spray
Spray mug, muffin cooker or crock bowl with non stick spray. Add everything but the egg and egg whites and cook in microwave on high for 30 seconds
Crack open egg and add to bowl along with egg whites, stirring gently but evenly into the other ingredients.
Return to microwave for 2 minutes on high. If you have a low wattage microwave or the mixture is still “loose” continue to microwave in 20 second increments until everything is firm but not hard. Add fresh black pepper. Let sit for one minute before trying to remove from bowl to move to bread or plate. The egg “muffin” should slide out easily. Use your imagination, these are a delicious and quick filling breakfast…enjoy!
