Weight Watchers Recipe: Air Fryer Stuffed Baked Apple 2 Smart Points

The girls in the If You Have an Egg Facebook Group have been pumpkin spice, baked apple, cinnamon and all things autumn cuh-razy this last two weeks.  I mean the temps here in Knoxville are in the 70’s so I really can’t blame them but come on.  It’s not officially fall yet.  And yet I’m willing to go ahead and jump in the leaves that haven’t drifted off the trees yet in order to enjoy these seasonal favorites.  Apples are especially delicious right now, and who doesn’t love a good baked one?

But my baked apple festivities are limited to long days when I have plenty of time with the oven and can keep an eye on them.  Never have I considered starting an apple when I didn’t have several hours, much less making one that I could enjoy at breakfast.

 

Air Fryer Baked Stuffed Apple: 2 Smart Points

Air Fryer to the rescue!  Among the many things I love about my Power XL Air Fryer with the copper basket, I do enjoy the fact that I can set a time…jump in the shower…and it will be done or cooling down by the time I get out.  If my food doesn’t need shaking and is ready before I am, the air fryer cools down, sits tight, and waits on me.  No more speeding naked out of the shower when you hear the timer go off.  Never again yelling at your spouse, children or even the dog to turn the oven off and take out whatever precious item was cooking while you were rinsing.

Air Fryer Stuffed Baked Apples:  2 Weight Watchers Smart Points
Ingredients:

  • 1 firm apple (I like Granny Smith)
  • 1 Tbsp water
  • 1 tsp Truvia Brown Sugar Baking Blend (optional)
  • generous sprinkle of ground cinnamon
  • 2 Tbsp Trader Joes Muesli Granola (or similar)
  • Coconut or butter flavored non stick spray

Instructions:
Wash and core apple, cut in half length wise.  Spray an OVEN SAFE small dish with non stick spray and add the water to the bottom.  If your air fryer requires pre-heating (my Power XL does not) do that now.  Add the cored and halved apple cut side up to the dish, don’t worry if they overlap a little.  Sprinkle granola evenly over both halves, then sprinkle with Truvia and cinnamon.  Lightly spray again with the non stick spray.  Carefully set the oven safe dish in the basket of your air fryer and close.  Set for 320 degrees for 25 minutes and go hop in the shower, walk the dog, check my blog….whatever you need to do for the next 20-25 minutes.  I suggest the first time you make one check at 20 minutes for done-ness since all air fryers are different.  Once you have your happy time established feel free to do whatever you need…when it’s done cooking the unit will cool down and not over cook or burn your yummmy apple.  Not only does this autumn addition emit the most pleasing aroma, it’s a great low point satisfying addition to breakfast.  Or top with your favorite low point ice cream (I prefer Halo Top!) or light whipped topping for a decadent dessert!

(caution:  the crock/dish is going to be VERY HOT….please be cautious when removing from the air fryer basket)
