Bacon Scotch Eggs (Air Fryer)

I have been infatuated with traditional Scotch Eggs for a while now. I even have a sticky note on my fridge that’s almost a year old reminding me to figure out how to Weight Watcherfy one and it still taste fried.

A traditional Scotch Egg is a Hardboiled egg enveloped in yummy sausage, coated in bread crumbs and then lovingly deep fried. Oh my heart.

But since we are trying to keep our wits about us and remain on plan, I decided to try this bacon wrapped version instead as a trial run.

 

Bacon Scotch Eggs

Yield 4 servings

1 SP Blue / 3 SP Green / 1 SP Purple

Ingredients

  • 4 hard boiled eggs
  • 4 slices one SP per slice bacon (I use either Trader Joe's Uncured Dry Rub, Aldi Applegate Farms Uncured or Applegate Sunday Bacon depending on which store I've been to that week)
  • 2 tbsp Trader Joe's or Bragg Nutritional Yeast
  • Dak's Original Red Seasoning to taste (or your favorite seasoning)

Instructions

Note: I made mine in my Simple Living Products Air Fryer but you could pull this off in an oven too I'm sure!

  1. Wrap each already hard boiled egg in one slice of bacon
  2. Sprinkle on Nutritional Yeast and spices.
  3. Place in air fryer basket and cook on 380 degrees for 8 minutes.
  4. Do yourself a favor and wait long enough to cut it in half before you dive in...it's as pretty as it is delicious!
