Well it is Pumpkin Spice Season after all….Facebook said so.

There are some things you just can’t avoid. Monday mornings. Death. Taxes. But they don’t all have to be bad. We now have a season that seems to be taking over the nation. Pumpkin Spice Season…I’m not even sure who started it. Starbucks maybe? I don’t care. I love them for it.

So just when I thought a good old French Toast Weggo couldn’t get any better, I received my new Dak’s Pumpkin Spice Blend in the mail. Whoa mama…that is the best smelling mail I have ever received! #teampumpkinspice

Pumpkin Spice French Toast Weggo

Ingredients

1 slice lite bread (no more than 1SP per slice, I used almost but not quite stale White Wheat)
1 egg
1/8 cup egg whites
2 Tbsp Fat Free Ricotta Cheese
1/4 cup canned Pumpkin (not pumpkin pie, just pumpkin)
1/8 cup Cary Sugar Free Maple Flavored syrup (or similar)
1 tsp Dak's Spices Pumpkin Pie Spice (or similar)
Non stick spray

Instructions

Start the waffle iron to heat according to instructions while you get everything else ready.
Liberally spray both sides of the waffle iron and then the bottom of the slice of bread.
Place bread on the bottom griddle and lightly press the middle with a spoon to just barely indent and evenly spread the ricotta and pumpkin.
Sprinkle with Pumpkin Pie Spice.
Then carefully crack egg in the center of the slice and then add egg whites. Don’t worry if some runs down, it’s all going to cook.
Let cook for approximately 5 minutes or until you can smell the yumminess. Gently lift the top a little to check and if the egg is set you are ready to go.
Gently open completely (if it needs a little help letting go gently poke with a spatula) and unplug the waffle iron.
Wiggle a spatula under the bread and try to lift out in one piece. I was actually surprised how well it all held together…even the parts that had oozed off the bread! I added 1/8 cup of sugar free syrup for zero points or if you’d rather have 1/4 cup it’s only 1 SP more!

The smell wafting out our loft door had to be sending waves of people wandering around looking which door to knock on!
