4/1/17 update and a new spice find:  you can blow your family’s minds by making this in the Simple Living Products Air Fryer! I have a Power XL. The corn is soooo easy. Lightly spray with nonstick olive oil spray. Generously douse with Dak’s Original Red. Air Fry on 380 for 8 minutes. So good!

I lied.  It’s not candy.  But is is corn…and it’s so delicious I am eating it like candy.  So there.

I have a slight obsession with a fresh grind Italian bread dipping seasoning that I stumbled upon during a visit to Gatlinburg, TN.  This little tourist town rests in the middle of approximately 500,000 acres of the most gorgeous national forest in the U.S.   If you do pop by for some seasoning grinders you may want to check out the views, some hiking, and a show.  Or two.

My coveted bread seasoning is Dean Jacob’s Italian Bread Dipping Seasoning in a fresh grinder.  Like all touristy things that are close to home, when we visit Gatlinburg we have our usual stops.  The Smoky Mountain Candy Factory, Mountain Mall, The Acorn, and our new favorite All Sauced Up.  Maybe some day I’ll try something besides my seasoning.

I put this seasoning on everything.  Eggs, ciabatta bread, plain bread, pizza, corn, veggies…my husband says the list of what I don’t put it on would be shorter.

But I digress.  Back to the corn.  That I eat like candy.

 

Candy Corn

Note: 0 SP Blue | 3 SP Green | 0 SP Purple

Ingredients

  • 4 small ears fresh corn on the cob (I like it still in the husk)
  • Olive oil non-stick spray
  • Fresh ground bread seasoning (or Italian seasoning) to taste

Instructions

  1. Wash corn and pat dry.
  2. Place in a microwave safe dish in a single layer.
  3. Spray liberally with non stick spray and then generously coat with the fresh ground seasoning. I'm pretty generous. Ok, maybe a bit heavy handed. But it's sooooo good.
  4. Do not cover. Place in microwave on high for 5 to 7 minutes depending on how crisp you like your fresh corn. If you are lucky enough to have access to a grill I can only imagine how these would taste. 
  5. Let cool for a minute or two and then try to stay out of them. I eat two. Every. Single. Time.
