Baked Avocado Egg – 5 Weight Watchers Points Plus Value

I love when friends and family send me recipes or ideas for recipes, it’s my newfound love language.  Getting pictures of new finds, arriving home to find new previously undiscovered treats, having someone pre-calculate the points plus value for a meal they made for me…it’s a kind of love I’ve never experienced before, and I like it!

My little sister is a brilliant pastry chef and decorator.  She has turned me into a snob on many sweet treats to the point there are several things I won’t eat unless she made them.  Spending 15 points on an “A Pretty Sweet Day” cupcake are some of the best PPV investments I’ve made.  But this time she was watching out for my points, she sent me this.  It’s yummy, it was filling, it was soooooo easy to make.  I love her and my tummy and I know she loves us too. 

Baked Avocado Egg – 5 Weight Watchers Points Plus Value per serving 

Makes 2 servings 

Ingredients:

  • 1 ripe avocado
  • 2 eggs
  • Fresh ground pepper
  • Sea salt
  • (Optional) Frank’s Red Hot Sauce or hot sauce of your choice

Instructions:

Cut avocado in half and scoop out about 1/3 or 2 tbsp of each half with a spoon.  I put the scooped out part in another salad I was making for lunch and counted that as 2 points (1/3 of each avocado half)

  
Crack two fresh eggs one at a time  and gently let each one fall into each half of the scooped out avocado.  Carefully place avocado halves egg side up on a baking tray or shallow dish lined with parchment paper 

  
Preheat oven to 425.  Carefully put avocados in and bake for approximately 15-20 minutes or until the edges of the egg white just start to brown.  Remove from oven and add fresh ground black pepper and sea salt to taste.  I added Frank’s Red Hot Sauce to mine (not shown) because I love hot sauce on eggs and it just seemed right.  Let it cool for just a minute and then enjoy!
