My mother introduced me to Spring Roll Wrappers a few months ago in some of her vegan delights and I loved them.  But apparently not enough to be brave and try using them myself until now.  They are oddly easy to work with and I was surprised by how quickly they thawed out and were ready for me.  I did quickly realize you need to wet your fingers when working with them or they dry out fairly quickly and don’t want to shape well.  As long as my fingers were wet they were ready for whatever shape I needed them to be in.  And bonus, with wet fingertips you can make them stick to themselves for easy closing.  Why haven’t I played with these before now?

I had exactly one serving of fried apples left and 4 people to try them.  No matter how hard I tried this maxed out at 3 servings…the kids got one serving each and hubby and I had to share a serving.  Next time I will make sure we are home alone so we can devour them all!

When you get down to the recipe notice that the honey is optional.  But I’m going to say the coarse ground sugar or sanding sugar is not.  It added just a little something something to the outside that made these really more like the fried pies they used to serve at McD’s and not so much like a Weight Watchers low point recipe.  Next time I’m going to use colored sugar for the season!  Now my sister is the pastry chef so I had to research a little to decide which kind of sugar to use.  According to the website “My Baking Addiction” the two kinds of sugar I chose are defined as:

Coarse sugar or Decorating sugar

As you can tell from its name, coarse sugar has a much larger crystals than regular white sugar. The larger size of the crystals (about the size of pretzel salt) makes the sugar stronger and more resistant to heat. This type of sugar also helps to give baked goods or candy a little texture. It is used mainly for decorating and comes in a rainbow of colors.

Sanding Sugar

Sanding sugar is another large crystal sugar. It is between white granulated and coarse sugar in size. It is another decorating sugar and comes in many colors. It also reflects light and gives of a sparkly shine. And, who doesn’t love their baked goods sparkly?

Fried Apple Mini Turnovers – 5 Weight Watchers Smart Points per serving (3 servings / 2 turnovers per serving) (3PPV)

Ingredients:

  • 6 spring roll wrappers thawed (check your wrappers to make sure they are no more than 1 point per wrapper)
  • 1 serving Granny Green’s Fried Apples
  • 1 Tbsp coarse sugar or sanding sugar
  • Butter flavored non-stick spray (I use Smart Balance)
  • 2 tsp honey (optional)
  • 1 tsp ground cinnamon
  • wet fingers

Preheat oven to 350 degrees.  Lay 6 thawed spring roll wrappers on a parchment paper lined cookie sheet in a single layer.  Put 1/6 of the serving of fried apples in the center of each one.  Wet your fingers for each one and gently fold over once to form a half circle, then fold the two ends in towards the center, then fold up and pinch the rounded side.  (If you have trouble with this part let me know and I will put it on Instagram, Periscope or YouTube for you to see in action).  Spray each one liberally with butter flavored spray and then sprinkle the coarse sugar / decorating sugar and ground cinnamon evenly over each one.  Place in preheated oven for 10-12 minutes or until the wrappers just start to brown.  Remove from oven and drizzle with honey (optional).  Let them cool just a minute or two before eating…trust me they are HOT if you get excited and bite right into one before it’s barely off the cookie sheet!
