Hubby’s exact words “those eggs.  Are there more?  If not can you make more?”   He doesn’t ask for seconds often.  And when he asks me to make  more of something after I’ve already cleaned up I know it’s a keeper.


I have to admit I’m a little infatuated with this spicy, eggy, cheesy, yummy concoction.  The idea was born one night while my husband was out of town and I was one spoonful away from tossing another empty container.  Let me pause here and say I don’t “toss” containers.  Everything gets washed and goes in the recycling.  Just felt Like I needed to get that out there….so anyhoo…there was one spoonful left in the Palmetto Cheese container and no hubby home to eat it to I could make that space in the fridge.  Not enough for a sandwich.  Ritz crackers are dangerous for me so I don’t keep them at home.  Hmmmm I can’t just throw it away.  But I need that spot.


Don’t look at me like that.  I had to do something, and I don’t throw food away.  If you follow me on Insta or are in my Facebook group you already know I can’t hardboil an egg to save my life so I keep store bought ones in my fridge.  And I had three left.  And the synapses weren’t syn-napping soooo….

 

Palmetto Cheese

If you can’t find this amazing yumminess opt out for regular pimento cheese and add some diced Jalapenos.  Trust me though, this is worth locating even if you have to drive a little.  According to Wikipedia “Palmetto Cheese is a trademark for a brand of pimento cheese from Pawleys Island Specialty Foods, a division of Get Carried Away[1] based in Pawleys Island, South Carolina. The ingredients: cheddar cheese, cream cheese, mayonnaise and a blend of spices come packaged in 12 ounce containers. Palmetto Cheese is manufactured and packaged at Duke Sandwich Productions[2] located in Easley, South Carolina. Palmetto Cheese is sold in three varieties: Original, Jalapeño and Bacon.”


Spicy Palmetto Deviled Eggs: 2 Weight Watchers Smart Points / 2 Points Plus – per serving (6 servings)

Ingredients:

  • 3 hardboiled eggs
  • 2 Tbsp Palmetto Cheese w/Jalapenos
  • 1 tsp diced Jalapenos

If you are hardboiling your own eggs more power to you.  After they have completely cooled (or if you are using store bought eggs) slice them in half lengthwise.  Carefully squeeze each half and using a spoon gently remove the yolks.  Place yolks and the palmetto cheese in a small bowl and mix until completely creamed.  Evenly divide the mixture and spoon back onto each egg half.  Top with a few of the Jalapeno dices and then pinky promise me that you will share.
