Busy Mom’s Potato Soup – 5 Weight Watchers Points Plus (4 servings)

Yesterday I drove past an allergy clinic and their new sign read “Ragweed Season is Here, We’ll See You Soon!”  And…welcome to East Tennessee. 

Every year when the ragweed arrives I think to myself “I waited too late this year but hey, I should make a note for next year to start the allergy meds before the ragweed blooms”.  And every year I forget. 

So when I realized I had forgotten (again) my daughter was already in full seasonal allergy distress.  I mean full blown, no way to make up for lost time, guilt ridden busy mom distress.  And she wanted soup.  I had worked all day, walked 4 1/2 miles with my Accountabilibuddy and finally made it home just before 8pm.  But she’s sick.  And I had gotten busy and forgotten again this year.  And then I found out her fiancé was eating with us.  Soup it is. 

  
But I’m a busy mom so I had to make is easy.  And it had to be with things I already had.  I hate that my baby girl was sick, but this.  This soup is so good that maybe it was worth it.   But just this time. 

  
Busy Mom’s Potato Soup – 5 Weight Watchers Points Plus per serving (4 servings) 

Great when paired with  World’s Easiest Jalapeño Cream Corn Muffins!

Ingredients:

  • 2 cups (1 can) Progresso Light Creamy Potato Soup with Bacon and Cheese
  • 1 2/3 cup (1 can) Sliced White Potatoes
  • 2 ears of corn (sliced off the cob)
  • 3 Laughing Cow Light Swiss Wedges
  • Sliced fresh mushrooms (optional)
  • 2 oz Diced Ham
  • 3/4 Progresso Can of water
  • Fresh ground black pepper

Combine all ingredients in at least a 2 quart sauce pan and heat to a heavy simmer but not boiling.  Stirring every 5 minutes continue the heavy simmer for approximately 20 minutes (that’s just enough time to whip up a batch of World’s Easiest Jalapeño Cream Corn Muffins!). Makes 4 approximately 1 1/2 cup servings.  

I hope you don’t wait for a sick child to try this, it was absolutely delicious!
