My focus this week is on getting back to healthy habits as I resume in-person WW workshops! To make that simpler and set myself up for success I’m preparing my food in advance and making things that are SO simple to make and delicious to eat!

Dinner for the week will be a new take on my Skinny Waldorf Salad.  This is a recipe that I keep in my back pocket as an easy go-to for busy weeks and now it’s going to help me get back on track!

To really round out the meal I recommend serving this Chicken Breast Waldorf Salad with cucumbers, tomatoes, and extra fruit for a filling meal that’s only 1 SP (on Purple)!

Chicken Breast Waldorf Salad

Yield 6 servings

1 SP Blue | 3 SP Green | 1 SP Purple

Ingredients

  • 2 That Man’s chicken breast (unseasoned)
  • 1 cup celery, chopped
  • 1 cups red seedless grapes, halved
  • 1 large apple, chopped
  • ½ cup cucumbers
  • ¼ cup light mayo
  • 1 cup nonfat, plain Greek yogurt
  • 1 tbsp water

Instructions

  1. Prepare That Man’s chicken breast without any seasoning, slice or shred as desired
  2. Combine all ingredients in a large bowl
  3. Stir until well mixed
