If you are reading tonight’s recipe because you are a fellow Weight Watcher having trouble avoiding “red light foods” please pull up a chair and let’s chat for a minute.  This recipe contains an ingredient I have struggled with my entire life.  Even when I weighed 115 pounds soaking wet I binged on chips.  Of course I didn’t know it was binging, I took my time, I never tried to hide it, but an open bag of chips was an empty bag.  Didn’t matter what flavor, what brand…an open bag of chips and a cold glass of milk.  Talk about a red light…

So now, 30 years and six times joining WW later I am at goal.  And I am at peace.  Will I still consume an entire bag of chips if put in that situation?  Maybe.  Probably.  So guess what, I don’t put myself in that situation.  But I still enjoy chips so now what?  I use my yellow light of caution and set myself up for the green light of success.  Corny?  Well so is this recipe.


Fiesta Pie – 13 Weight Watchers Points Plus (recipe is for one serving, quadruple recipe and make in a square baking dish for a family or guests)

Ingredients:

  • 4 oz grilled chicken (I used 2 skewers of West End Mediterranean Grilled Chicken available at Costco and always in my fridge) torn into small pieces
  • 1/2 cup black beans rinsed
  • 1/2 cup fresh corn kernels
  • 1/2 cup TJ’s Healthy 8 Veggie Mix
  • 2 tbsp Ken’s Lite Ranch Dressing
  • Smart Balance Spray
  • ⚠️ caution!  13 each Lay’s Wavy Hickory BBQ Chips crushed in a zip lock bag (or Doritos would be good!)   Yes, I want you to literally count out 13 chips or alternatively buy the little individual bags that are 4 points plus each.  And then get rid of the rest of them.  You have skinny people in your life who can handle an open bag, it won’t be a problem to find the remainder a good home. If I can do this you can too, and let’s face it only the first handful only tastes that good anyway.
  • Optional Frank’s Red Hot to taste.  My daughter said it made more of a buffalo chicken flavor.  She gave both a thumbs up (because her mouth was full)

In a large individual crock bowl or other both microwaveable and oven safe dish combine the chicken, black beans, corn, healthy 8 and dressing and stir until evenly coated.  Top with crushed chips, then spray with Smart Balance.


Preheat oven to 350.  Microwave mixture for 3 minutes on high, then place in 350 degree oven for 15 minutes.  Use an oven mitt when you take this out, it’s hot!  This delightfully simple dish satisfied my desire for a south of the border treat, and filled my chip quota for at least another month.  Winner!
