Even though she created the badge, this bravo is for Casey!

This week I recommitted to WW My Way Purple for another week and resolved to continue to find a way to have fresh, real food ready and handy to eat I had overnight oats in the fridge at work from our Sunday Night chat. Alyssa and I always eat “toddler food” on Mondays consisting of carrots, apples, grapes and stick cheese. I already had dinner planned, my zucchini and squash from a local market ready to cube for the tofu skillet creation I was planning and SURPRISE! hubby calls to say his dad had a heart attack and was headed to the hospital.

To complicate matters John’s mom has Dementia Alzheimer’s and can’t be left alone. It was a juggling act of toddlers, hospitals, cockapoos and elder care last night.

But when I arrived to exchange the two year old for the 76 year old they were making dinner. Casey’s grandmother has never cooked with her (or anyone really hahaha) but there they were making a casserole. Whether intentional or not Casey was using her tools from Sunday’s chat and made us all a delicious meal before she shipped us back off to the hospital. Best of all she swapped out some higher point ingredients for these : 93% lean beef, green peppers, light sour cream and cheese, and wait for it….riced cauliflower instead of rice! There are no pictures because we ate it…all!

Way to use your tools Casey and plan not PANIC!
