[amd-yrecipe-recipe:2]Tuesdays are weigh in day for me and my family used to celebrate another week survived by having “free for all Tuesday”. For months I treated Tuesday like the savior day “I made it!” now let’s gorge ourselves and start all over again tomorrow!  Only tomorrow turned into next week…next month…next holiday.  It was a vicious half year cycle of a roller coaster ride except I wasn’t having fun and the lows were coming more often than the highs.  So I held a family meeting and said I love you, but I love me too and I can’t keep treating Tuesday’s like some magical point free day.  Luckily I have the most awesome family on the planet and they have honored my request, even helped me come up with fun ideas like tonight.  Tonight was all my daughter…she picked up all this at the store after work, she’s a keeper.

Chick’N Nachos – 20 Weight Watchers Smart Points (17PPV)

Ingredients:

  • 4 each Simple Truth Meatless Chicken Crispy Tenders – cooked according to package directions
  • 18 each Santitas Tortilla Chips
  • 1/4 cup Sargento Reduced Fat 4 Cheese Blend
  • 1 tsp Goya Recaito
  • 1/4 cup Trader Joe’s Organic Super Sweet cut corn
  • 1/4 cup Organic Black Beans
  • 1/8 cup diced jalapeño


On a small baking sheet lined with parchment paper spread out tortilla chips in one layer but touching each other.  Mix Goya with black beans and corn and spread evenly over chips.  Chop meatless chicken into bite size pieces and add to chips along with the shredded cheese.  Preheat oven to 425 and bake nachos for 12-15 minutes or until cheese melts and chips start to brown.  Wait until you see how big this looks when it’s done, you will never want to go back to cheat day again…this is soooo not a diet!
