Weggos have become a staple at our house now…who doesn’t want French Toast that is contained to literally one appliance for prep, cook and clean.  I mean really, it’s less than a 10 minute investment for this super fluffy, super easy, super de dooper delicious breakfast staple.

But for those of you clamoring for a sunny side up or over easy Weggo I just can’t pull it off.  Hasn’t happened.  Isn’t gonna happen anytime soon.  The physics just doesn’t support that coveted golden egg syrup when you set a heavy waffled lid on top of it, ya know?

Plus many of you don’t even have a waffle iron.  Casey doesn’t even have one, she has to get her Weggo fix from me.  But what about an air fryer?  Could we create a Weggo level breakfast but still keep the integrity of that gorgeous yolk?

Yield 1 Sunny

WW: 2 Blue / 4 Green / 2 Purple

Ingredients

  • 1 slice Natures Own Whitewheat bread or similar
  • 1 egg
  • 3 Tbsp EggLand's Best Liquid Egg Whites or similar
  • 1/4 Jimmy Dean Cooked Turkey Sausage Crumbles (meatless friends use veggie sausage crumbles) or similar
  • 1/8 cup Cary's Sugar Free Maple Syrup or similar
  • 1 Tbsp Fat Free Ricotta
  • Non stick spray

Instructions

  1. Spray pan with non stick spray
  2. Spread ricotta on bread
  3. Add slice of bread ricotta side up and slightly dent center with a spoon
  4. Crack open egg and add to dented center of bread
  5. Pour egg whites around edges and in center being careful not to move yolk
  6. Add sausage crumbles being careful not to break yolk
  7. Place pan in air fryer basket and cook on 360F for 10 minutes (longer if you want a firmer yolk)
  8. Remove and let sit for a couple of minutes before removing with a flat spatula to plate
  9. Add syrup and enjoy!
