When Big Mountain Foods asked if they could send me a box of vegan, gluten-free, and some soy-free yummies to try for their Blogger Recipe Challenge I was like…um yes please! The box was filled with all kinds of interesting goodies that would have had Vegan Nana experimenting for days.  

The only item I haven’t quite figured out is Lion’s Mane…some more research is going into this one but the rest were as expected, prepped well, had good flavor, and will lend themselves well to flavorful and fun plant based recipes.

First Up:  Big Mountain Big Brat Veggie Links

These bratwurst inspired “sausage” links are certified vegan, non-gmo, cruelty free and from a women owned company.  Perfect start right?

Preparation methods (the veggie links are pre-cooked but Big Mountain recommends heating them to 160 F minimum before consuming):

  1. Pan fry – Add a small amount of your favorite oil to a pan and cook on medium heat for 2 to 5 minutes until crispy brown on the outside. I give this method a big thumbs up, they turned out as expected!
  2. Microwave – Microwave on high for 2-3 minutes. I give this method a big thumbs down – most veggie products just turn to chewy on the outside, icky on the inside.
  3. With other ingredients in a recipe to be baked or stir fried – worked well although for prettiest presentation I recommend browning the outside first
  4. Air Fryer – Spritz with your favorite oil, add a sprinkle of nutritional yeast, and air fry on 280 F for about 10 minutes shaking half way through. They turned out GREAT!

This simple “cheater” dressing is made with pre-prepared ingredients I already had in my fridge or pantry to continue my mission to reduce my food waste this year!

Finish: Assemble the Slaw “Dog”

Once you’ve prepared your Big Brat Veggie Links and Caribbean Miso Dressing you’re ready to start assembling your dogs. You’ll be amazed at how simple it is to prepare this delicious vegan meal!

Ingredients

Caribbean Miso Dressing

  • ½ cup G Hughes Sugar Free Asian Miso Dressing
  • ½ cup Thai Kitchen Unsweetened Lite  Coconut Milk
  • 1 tsp (or to taste) Dynasty Hot Chili Oil
  • 2 Tbsp PB2 or similar powdered peanut butter

Caribbean Slaw “Dogs”:

  • ½ cup Caribbean Miso Dressing
  • ½ cup diced fresh pineapple
  • 2 cups bagged slaw mix (without any dressing) or shredded cabbage such as Napa Cabbage
  • 4 Big Mountain Foods Big Brat Veggie Links
  • 4 Whole Wheat Hot Dog Buns

Instructions

Caribbean Miso Dressing

Add all ingredients to a mason jar or other container with a lid or drop in a protein shake mixer ball if you have one and shake away! Stores well in the fridge for up to 7 days. Does not freeze well.

Caribbean Slaw “Dogs”:

  1. Prepare Big Brat Veggie Links per package directions or see my methods earlier in this post
  2. Lightly toast buns and keep warm
  3. Add pineapple to Caribbean Miso Dressing and toss (best if you can let marinate in the fridge for about an hour!)
  4. Place one warm veggie link in each bun, add slaw and serve immediately
  5. Amaze your friends - depending on the buns you chose, you just made a vegan meal!
