Creative Cooking on a Budget (A Very Tight Budget!)

Well… after much prayer, soul searching, and family meetings John has resigned his position from the company we thought he would retire from. It was a very difficult decision. The original owners were so good to our family it’s borderline ridiculous. And he lives and breathes his guys. Literally.

But his future with the new owners requires he travel as much or more than he had been. Don’t get me wrong… that is the job. If he can’t travel he can’t support the program and everyone who depends on him.

But he has made sooo much progress with his mom’s Dementia and his dad’s health these past couple of months we just couldn’t afford any set backs. None. He has her on such a routine now that they are smiling again, she’s cooperative rather than combative, her meds are finally doing what they are supposed to do.

But it requires he go to their house twice a day. Every day. At exactly the same time. No deviations. He was late one day this week and we had a near disaster. We have no idea how long she/they will be with us. They raised him, they helped us raise Casey, they adore and are as invested as they can be in Alyssa. We owe them this time no matter what.

But what the heck does that have to do with cooking on a budget? John is the sole breadwinner in our household because I’ve spent more time helping, hugging, and providing than making sure I also earned an income with the countertop shop and now Test kitchen.

So the reality is I am now on a budget. A tight one. No more $120 grocery trips for our chats. No more binge trips or online orders to try new products. I have $25 per week to spend on our food, Alyssa’s food and Dusty until we replace his income.

The good news is we are happy with his decision. We have been without his income before and we can do it again. And the best news is we have been blessed beyond measure over and over so our pantry and fridge are already bursting to overflowing!
